If it's not going to be fuzzy purse mints.....

If I am not going to be chowing down on the mints at the bottom of my purse, I am going to need carbs. Lots and lots of carbs. And please don't forget the cheese - if you are beyond stressed, everything can be made better by the addition of cheese. And what the hell...you may as well throw in pre-packaged fake cheese goodness and fries. I mean.....if your calorie count is going to hell in a hand-basket, it may as well be a good and bumpy ride!

I was indulging in a tiny bit of stress related food porn last week and was perusing The Cooking Photographers website when a picture caught my eye. A picture of fries....and cheese and hell, just the ultimate "I've worked too much in the last 14 days and what kind of crap can I shovel into my body" recipe that I was looking for.

I quickly bought the ingredients and headed home. S raised an eyebrow when he saw me willingly unload a grocery bag that had frozen fries, ground beef AND Dorito chili con queso dip. I am pretty sure that boy thought he'd hit the "boy food" jackpot.

I am pretty sure this pan has at least 1,000,000 calories on it.

But it was worth it.....every last damn bite of it. And then the next morning I made friends with my rowing machine....again.

Green chili cheeseburger french fry casserole - adapted from The Cooking Photographer

Ingredients
1 ½ pounds extra lean ground beef
1 onion, diced
1 (7 ounce) can diced mild green chiles
1 jar Doritos chili con queso cheese sauce
1 heaping cup shredded cheddar cheese
About 1 pound frozen shoe string french fries
A sprinkle of salt for fries
Instructions
1. Preheat the oven to 400 degrees. Get out a 9x13 inch Pyrex pan and a large skillet.
2. Cook the ground beef and onions together over medium high heat until no longer pink, Strain off the fat and place the meat mixture back in the pan.
3. Add the chiles and nacho cheese sauce to the pan and stir into the meat. Cook for about four minutes on medium low until combined and warmed through.
4. Pour the meat mixture into the 9x13 inch pan. Spread out and top with shredded cheddar. Top with frozen fries and sprinkle lightly with salt.
5. Bake for 30 minutes.

  5. Granted, I did not have to spend an hour on the rowing machine to make up for it, but from my perspective all I can say is it seems totally worth it. You just gotta wallow in these things sometimes when the opportunity presents itself.

    Ungourmet - I put green chilies in just about everything anyways - they are the perfect addition to spice up a dish.

  17. This is the way to eat fries! A little crumble of bacon, a dollip of sour cream and a sprinkle of sliced green onions wouldn't be bad either...I'm just sayin' ;-)
