Sloppy sloppy sloppy

This is the time of year where I start gearing up to work wonky hours. We have audits, inventories, year end, meetings...you name it and we do it between October and February which means weird hours at work. So you will see more quick and easy weeknight meals and the fun, lengthy stuff on the weekends. But, as I am learning, quick and easy doesn't mean less tasty!

I find Chatelaine (a Canadian magazine) always has great recipes for the time crunched cooks among us. I had a recipe for a meat sauce dog eared for a bit now - they call it South of the Border sauce. Really, there is nothing horrendously special about this. Ground beef, pasta sauce, salsa - not much going on there. They suggest serving over crusty bread, but I picked up some whole wheat kaiser rolls instead. The sauce was not bad - very much like a sloppy joe sauce. But what made the meal.................

Was topping this with sliced avocado and cheese. Yum!!! I served them open faced with a fork and knife. I would recommend adding some black beans perhaps next time....or some chipotle chilis. I used chipotle tabasco sauce which added a slight smokiness. This sauce would taste great on top of rice!

You can find the recipe HERE.

  3. Cathy, this looks awesome. And avocado is rather like bacon...one of those ingredients that makes pretty much everything better.

  13. I feel like sloppy joes in general can only be so amazing but the toppings definitely make all the difference. Avocado is just one of the best fruits out there. Great idea.

  20. I keep seeing you 'here and there' as I browse blogs and comments. I do believe you and I 'hail' from the same stomping grounds (literally) .. Grin! Now I am a soggy westcoaster...and lovin it equally. I also see that you have discovered that Chatelaine has super recipes too....my recent discovery. Love your blog....real cooking! Love the title anymore...perhaps you and I have something more in common...not that I am an accountant...but the question mark on the end of the title made me see a little 'smirk'? Happy Sunday
