I love the "not normal" vegetables. When I was little I went through a phase (
ok...a very long phase) where the only vegetable I would eat was
lima beans. To this day I don't think my parents have willingly had
lima beans in their house. But what are you to do with a fussy 7 year old if you want them to eat veggies?
My other love growing up....
brussels sprouts. I have a delicious recipe that I make every year that calls for shredding them, cooking them in wine with garlic and bacon and serving them like a warm coleslaw. This year though I got adventurous. First mistake.
But not really a mistake...............the recipe itself tasted delicious. Someone (we aren't pointing fingers here in the spirit of Thanksgiving) should have boiled them a bit longer.......they were tough.

But..............toughness aside, the
parmesan cream
sauce was out of this world! I believe that even a die hard
brussels sprouts hater would love this dish when set in front of them.
Ok, more so if you could chew the $%^#* sprouts, but that's neither here nor there.

I will attempt this again, probably not during a holiday meal, but as a side dish to some roast pork or chicken breast.

Maybe it's just that you didn't cook them enough like you said. Did you trim the end off, they are bitter.

I loved brussel sprouts as a kid, too. I never could understand how everyone else at school thought they were so terrible. Little baby cabbages - what's not to love. I normally only bathe them in butter, but I believe you when you say that the parmesan sauce was amazing - it looks great!

ReplyDeleteI thought even hard core brussl sprouts haters would love my bacon balsamic brussel sprouts... but my friend said, "Sorry... they are still brussel sprouts!" I was sure they would convert her!
I'm not a fan of brussel sprouts because of their slight bitterness. But with such a lovely parmesan cheese sauce, I'm sure I'd like this!

Spryte - ooooh pass on that recipe! People need to be open minded and try things more than once. The brussels sprouts of your childhood are nothing compared to what you eat now!

ReplyDeleteFor Thanksgiving I used your recipe, but instead of shredding the sprouts I steamed them until almost tender and then followed the rest of the recipe. Try using the baby brussel sprouts. I picked through the bin and took all the smallest ones I could find. You use more, but the results are much better.Looking forward to trying this recipe too. I'm not much off a brussel sprout fan, but when they are disguised I will eat them.
Mom - I had some small and some large. You are right, the smaller ones tasted a lot better.

Dajana - I think bitter veggies are an acquired taste....but then again, any veggie slathered in butter, cream or cheese passes the test for me.
