I am not going to complain about weather........

Nope, not this year. You see, it's October - I love October. I love the cool crisp mornings, the warm afternoons and the changing colours of the leaves on the tree. I love being bundled up in sweaters and scarves. I love the harvest moon in all of it's humongous prairie orangeness.

And I start to thinking, I am lucky I can see the moon. I am lucky I can smell the fires burning the leaves. I am lucky I am able to walk around outside and enjoy the crisp air. I am lucky I can hear the kids playing outside. I am lucky for so many things.............................

And then I look at the friggin Weather Network and they are calling for snow on Saturday already. Screw you weatherman and your friggin weather....I'm moving to Florida to hang out with Pierce and ride motorcycles!

On that note, my buddy Wandering Coyote over at Retorte has been cooking through some of Kylie Kwong's amazing recipes from her cookbook. When I saw this recipe for Mongolian Beef I knew it would be trotted out on a night where I wanted something quick and easy. Like Wandering, I subbed coleslaw mix for the shredded cabbage which made this a cinch to prepare.


I loved the flavours that came together in this dish. It was satisfying in the way that a meal can only be when you know how easy it was to prepare. I did use rice wine and thought it turned out great! You can find the recipe HERE.

    Taste - it's Canada...we should know better than to expect anything different ;) I think Canadians are the ultimate weather optimists - one nice day and we're positive it'll be like that forever.

  11. You do know it's unbearably hot in Florida from May through Sept., right?! It's been great weather this past week....wish I could send you all some.
