Where does the time go???

I cannot believe it's September already.......there's only 4 months left in the year and it feels like we just celebrated the new year!

Still rushing around, still not blogging. I promise to stop wearing white after Monday, and to start cooking again :)

Here is the easiest way to grill a chicken though - cut out the back bone and flatten it. Rub all over with olive oil, garlic and whatever spices you like (I'm a huge fan of smoked paprika and cumin). Toss on the grill, bone side down for 10 minutes and then flip every 10 minutes until done. A normal sized chicken done like this takes about 30 minutes and is absolutely delicious. S and I usually just sit and pick the meat off the chicken - screw the carving process!

And my first tomato!!!!! The best tasting tomato EVER. Ok, I exaggerate, but it was pretty damn good and I'm very proud of myself. There are 3 more ripening soon and probably a bunch that'll never make it to fruition. Better luck next year!

  1. Glad you're back.
For me chicken means fingers :))
but I guess I'll never be able to teach my husband to do that.
    Have a nice day

  3. You should be proud of that tomato, but don't let the others go to waste! Fry them. Or make some sort of a preserve (pickles or a confit? I know, you've already done pickling this year...)

  4. Taste - definitely! We hopefully have another couple of weeks until our first frost - I'd like to limp them out as long as possible to have fresh. Whatever is left I'll do some sort of relish.

  5. I think this technique is called "spatchcocking". I saw it in Canadian Living - did you? I really want to try this!

  6. Wandering - I can't remember where I first saw it - it was last year some time. I have another recipe where you use coconut milk and thai chili paste to make a rub for the chicken.

  7. the chicken looks great. The tomato looks lovely. For your tomatos if they haven't ripened; put them in a brown bag for a couple of days or you can also put them on your window sill.

  10. Absolutely delicious looking chicken! I like paprika and cumin together.

BTW, you don't have to give up white after Labour Day. White is now fashionable during all seasons!

  12. In Florida you see folks wearing white ALL year round. Sometimes I wish I lived in the keys...but that's another story...

Great looking tomato and that chicken! I had never heard of grilling one that way before. Do you use gas or charcoal to grill?

  13. Pierce - always grill lately.....never enough time to do charcoal (which is quite sad).

  14. You avoiding saying Spatchcock?
It's so much fun to say!
The chicken looks delicious, and congrats on the tomato. You can probably google some recipes for your green ones if they don't ripen.
