The wonder of roasting

Everybody has been on me about my lack of recipes lately. Even S complained last night that I haven't been blogging...which secretly was a complaint I think that I haven't been home cooking much the past 2 weeks. Instead, I've had a fabulous time at the Lion King musical with my goddaughter; golfed; had a facial; gone to the fireworks, etc. Just a bit of fun before work gets crazy busy in the next few weeks.

I also finally saw the Julie and Julia movie. Meryl Streep was amazing as Julia Child - I would've preferred the whole movie to be about her.

As for me this weekend....I'm bach'ing it. S is off helping his best friend move 1000 km's closer to us! So instead of being a 10 hour drive away, he's going to be a 10 minute drive away. I am no longer S's only form of entertainment :) This works well for Thursdays this fall when I start fencing again as W and S can have playdates (sorry guys......as K says, your bromance is true).

Part of baching it involves pickling 30 pounds of cucumbers. They are on the counter downstairs taunting me (it really is odd that I always hear vegetables talking to me isn't it mom?) and I am upstairs blogging and drinking coffee and baileys....a fine start to the pickling process I might add. If I believed in conspiracy theories, I'd believe that when I informed S of the impending pickling on Tuesday and he informed me on Wednesday of the impending moving....that it was a ploy to get out of helping! (haha, love you honey)

But I'm rambling and you guys want food. I've talked before about the wonders of roasting vegetables....in particular cauliflower (the most evil food out there). I came across a recipe in the most recent edition of Canadian Living for a roasted cauliflower risotto. In the time it takes to roast the cauliflower you will be able to have the risotto completely prepared.

Look at that perfectly browned little piece of cauliflower! The pictures aren't that great (as white food often is hard to photograph), but the nutty flavour of the cauliflower was out of this world! This is a great vegetarian dish, or if like us you aim to have one meatless dish a week in an effort to diet and be healthy. Speaking of the diet....that horrid thing I started 4 months ago?? Down 12 pounds.....not the fastest moving diet, but I am happy to report down a pant size :) And back into skinny jeans (woo hoo).

We served this with a glass of Valpolicella (S's favourite wine varietel) and some garlic bread.

  1. I saw that recipe, too! There is also a recipe in this month's Gourmet for roasted cauliflower with a kalamata olive vinaigrette. My SIL roasted cauli at Christmas and it was really good.

  7. Oh...I love cauliflower but the husband isn't wild about it. I am always on the seacrh for new ways to make him eat it.
