I love peanut noodles

It's been cold and rainy the past few days - not good end of summer weather at all. So while I should be outside bbq'ing up a storm, I've instead been jonesing for some carb fueled dinners to keep me warm.

I have had this recipe for Thai Pork and Spicy Noodles bookmarked from Chatelaine for some time now and it was the perfect time to try it. My focus has been off lately on just about everything, so a meal that is prepared in 18 minutes was perfect for me this week. Any longer than that and I may have booked an airline ticket to Spain or something by accident ;)


I did add an extra tbsp of the hot garlic chili sauce to the dish - I find that most dishes aren't nearly spicy enough. Thankfully S doesn't mind spicy food or we'd be in trouble. Thanks to the peanut butter in the sauce, these had an intense creamy, peanut flavour that I loved.

I also sauteed the broccoli with the pork rather than boiling it with the noodles - I prefer my veggies to be on the crunchy side.
