Isn't it spring??

At 4 p.m. we were sitting out on our deck with the neighbors..enjoying a mango daiquiri (or 2). It was sunny....it was warm. My hoody was unzipped to allow for the sun to start tanning my chest (ok...cleavage).

This is 2 hours later.

Oh MY FREAKING GOD....stop bloody snowing already! I know it's Calgary...I know it snows randomly. But my birthday is next week...my tulips aren't even up....I AM DONE WITH WINTER! I'm going absolutely insane with wanting it to be warm. I gave away my summer clothes to my goddaughter today...ok..I'd need to lose 10 pounds so they'll fit, but that's irrelevant. I'll be living in hoodies and jeans for the next 25 years until I retire.

So my plans for a fabulously yummy grilled caribbean chicken and salad turned into me making S's favourite dish.........chicken chow mein.

The key to this dish is apparently the cashews which I did not have on hand :( Sorry hon. The other key though is being prepared before you start.

Shred your carrots, get your peas ready and your noodles.

Chop your mushrooms and add ginger.


Stirfry the chicken.


And make your husband very happy that his favourite meal is on the table. Yep, doesn't matter that I make Osso Bucco or other various time consuming meals...ask S what he wants for supper and it's usually a unilateral cry for chicken chow mein.

    Suddenly I have a craving for fresh peas, I haven't had any snow or sugar snap yet this year.

  3. It's quite tasty but very very salty I find. I'm usually extremely thirsty the morning after. Ugh - hurricane winds suck too. I just want summer now. Could care less if spring even arrives.

  6. Cathy, you're right - forget spring, fastforward to summer! If you have to, stay inside with a DVD of Fantasy Island & sip Sangrias. Wear a lei around your neck if you have to!
