Any time I find a recipe with these two ingredients in it:

I'm going to make it. I love goat cheese - it's in my top 5 cheeses to eat (rounded out by Brie, Oka, Manchego and Havarti). And I adore all things lemon. So imagine how happy I was to get my new Chatelaine magazine with an easy spring pasta recipe that incorporated these two ingredients!!
This dinner was a snap to make. In the time it took to boil the pasta, we had supper ready.
You'll also need some chopped up sun-dried tomatoes. I used the ones in oil - I prefer their taste over the tomatoes packed in water.

You'll need some of that fabulous spring vegetable...asparagus. Stay away from your husband when he pees the next morning though. I know not everybody experiences that fabulous chemical reaction that makes you smell like you are rotting from the inside out, but mine does and it's not pretty.
He was once asked "Dude are you dying??" while at the urinal next to some guys from work.

And shredded parmesan..............mmmmm....parmesan. I don't know how I've managed to go through my huge jar of Costco parmesan in 2 weeks time, but I'll have to head there on Saturday for more.....and it's a good excuse to go to Ikea at the same time to stare at the counter tops I can't afford to buy yet (house renovations are FUN...not).

Open some wine. You'll only be seeing this with the weekend posts for the next 14 weeks while I attempt to win the $600 pot at work for losing. I'm on a role.....one competitor ate a chocolate bar and a whopper today. The other - banana bread. I've been living on rabbit food.........
This is a great wine from the Okanagan...about 10 minutes from my parents house!

ReplyDeleteThe urine thing.. so true.. asparagus does it to my husband also, dish looks great and I must tell you, they have an awesome displayshed at home depot.. think of the countertops, then head to the shed;) Think of me..
ReplyDeleteI used to make a dish like this all the time, not much cheese but with shrimp, capers and lemon zest, all in a little bit of chicken broth. I think I got the recipe from Chatelain too, like 10 years ago! :-)
